Chef Bobby Patel is the Culinary Director and Co-founder of the acclaimed restaurant chain Thyme & Whisk and Mad Doh, which operates throughout India under Company Trinetra Venture. Thyme & Whisk is a multicuisine vegetarian establishment that excels in fusion dishes, blending Indian and global flavors with high-quality, unique ingredients. The restaurant boasts 16 locations across major cities including Mumbai, Bengaluru, & Hyderabad. Mad Doh specializes in Italian cuisine, particularly known for its gut-friendly sourdough Napoli brick oven pizzas and hand-rolled pastas, with four outlets situated in Mumbai and Bengaluru.
With a vision to transform vegetarian dining in India, she is the driving force behind both Thyme & Whisk and Mad Doh. Although she began her career with an engineering background, her passion for culinary arts led her to prestigious culinary schools, culminating in certification from City & Guilds London. Her innovative restaurant concepts are making significant strides in the industry.
She possesses extensive knowledge, a refined palate, and meticulous attention to detail and She firmly believes in the superiority of flavors, textures, and authenticity found in dishes prepared from scratch. She is always found in the kitchen experimenting with new recipes and developing concepts, continually striving to elevate the quality of her establishments.
With the ambition to lead the charge in redefining vegetarian dining, she plans to launch Vegetarian Cloud Kitchens across India and a specialized chocolate and sweet gifting brand in 2025.
